Ingredients

  • 1 cup uncooked rice preferably long grain or basmati
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ½ cup red onion finely chopped
  • ¼ cup kalamata olives pitted and sliced
  • ¼ cup feta cheese crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper freshly ground

Instructions 

  1. 1. Cook the rice according to package instructions. Let it cool completely.
  2. 2. In a large mixing bowl, combine the cooked rice, cherry tomatoes, cucumber, red onion, and kalamata olives.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
  4. 4. Pour the dressing over the rice mixture and toss to combine.
  5. 5. Gently fold in the crumbled feta cheese.
  6. 6. Serve immediately or refrigerate for later. Enjoy!
