Ingredients 

Vegetables

  • 2 zucchinis, sliced
  • 1 eggplant, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 3 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine all the vegetables and garlic.
  3. Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper. Toss to coat.
  4. Spread the vegetables on a baking sheet in a single layer.
  5. Roast in the preheated oven for 30 minutes, stirring halfway through, until vegetables are tender and slightly browned.
