  • 4 ears corn on the cob husked
  • ¼ cup mayonnaise
  • ¼ cup cotija cheese crumbled
  • 1 teaspoon chili powder
  • 1 tablespoon cilantro chopped
  • 1 unit lime cut into wedges

Instructions 

  1. Preheat your grill to medium-high heat.
  2. Brush the corn with a bit of oil and place on the grill. Cook for about 10-15 minutes, turning occasionally, until charred and cooked through.
  3. In a small bowl, mix together the mayonnaise and chili powder.
  4. Once the corn is done, brush each ear with the mayonnaise mixture, then sprinkle with cotija cheese and cilantro.
  5. Serve with lime wedges on the side.
