Ingredients 

Sopes

  • 2 cups masa harina
  • 1 ½ cups warm water
  • ¼ teaspoon salt

Toppings

  • 1 cup refried beans
  • 1 cup shredded lettuce
  • ½ cup crumbled queso fresco
  • ½ cup salsa

Instructions 

  1. In a mixing bowl, combine masa harina, warm water, and salt. Mix until a dough forms.
  2. Divide the dough into 8 equal portions and roll into balls. Flatten each ball into a thick disk.
  3. Heat a skillet over medium heat. Cook each disk for about 2 minutes on each side until lightly browned.
  4. Remove from skillet and pinch the edges to form a rim. Let cool slightly.
  5. Top each sope with refried beans, lettuce, queso fresco, and salsa. Serve immediately.
