Panzanella Salad
A classic Italian bread and tomato salad that's perfect for summer.

Main Ingredients
- 4 cups Stale bread, cubed preferably ciabatta or country bread
- 4 cups Tomatoes, chopped
- 1 cup Cucumber, sliced
- ½ cup Red onion, thinly sliced
- ¼ cup Basil leaves, torn
- ¼ cup Extra virgin olive oil
- 2 tablespoons Red wine vinegar
- to taste Salt and pepper
In a large mixing bowl, combine the cubed bread, chopped tomatoes, sliced cucumber, and thinly sliced red onion.
Drizzle the olive oil and red wine vinegar over the salad. Season with salt and pepper to taste.
Toss everything together until the bread is well coated with the dressing and the vegetables are evenly distributed.
Let the salad sit for about 10 minutes to allow the bread to soak up the flavors.
Just before serving, add the torn basil leaves and give the salad one last gentle toss.
