Peruvian Lomo Saltado
A classic Peruvian dish combining stir-fried beef with tomatoes, onions, and fries.

Main Ingredients
- 1 lb beef sirloin, sliced into strips
- 2 medium onions, sliced
- 2 medium tomatoes, sliced into wedges
- 1 yellow chili pepper, sliced optional
- 2 tablespoon soy sauce
- 2 tablespoon red wine vinegar
- 1 bunch cilantro, chopped
- 4 potatoes, cut into fries or use frozen fries
- to taste salt and pepper
- 2 tablespoon vegetable oil
1. Cook the fries in a deep fryer or oven until golden and crispy. Set aside.
2. Heat oil in a wok or large skillet over high heat. Add beef and stir-fry until browned. Remove and set aside.
3. In the same wok, add onions, tomatoes, and chili pepper. Stir-fry for a few minutes until the onions are translucent.
4. Return the beef to the wok. Add soy sauce, vinegar, salt, and pepper. Stir well to combine.
5. Add the cooked fries to the wok and toss everything together.
6. Garnish with chopped cilantro and serve immediately.
