Pinto Beans with Mexican Style Seasonings Recipe

- 2 cups Pinto beans soaked overnight
- 1 tablespoon Olive oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Cumin
- 1 teaspoon Chili powder
- 1 teaspoon Oregano
- 4 cups Vegetable broth
- to taste Salt
- to taste Black pepper
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
3. Stir in the cumin, chili powder, and oregano. Cook for another minute.
4. Add the soaked pinto beans and vegetable broth. Bring to a boil.
5. Reduce the heat to low and simmer for about 60 minutes, or until the beans are tender.
6. Season with salt and black pepper to taste. Serve hot.
