  • 4 large potatoes peeled and grated
  • 1 medium onion grated
  • 2 large eggs beaten
  • ¼ cup flour
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup vegetable oil for frying

Instructions 

  1. 1. Grate the potatoes and onion, then place them in a mixing bowl.
  2. 2. Add the beaten eggs, flour, salt, and pepper to the bowl. Mix well.
  3. 3. Heat the vegetable oil in a frying pan over medium-high heat.
  4. 4. Spoon the potato mixture into the pan, flattening each latke with a spatula.
  5. 5. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. 6. Drain on paper towels and serve hot.
