Ingredients 

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 2 tablespoon Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Heat the pressure cooker and add a bit of oil. Brown the beef cubes on all sides.
  2. 2. Add the chopped onion and minced garlic. Cook until softened.
  3. 3. Stir in the tomato paste, beef broth, carrots, potatoes, thyme, salt, and pepper.
  4. 4. Lock the lid in place and set the pressure cooker to high pressure for 35 minutes.
  5. 5. Once the cooking time is up, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
  6. 6. Open the lid carefully, stir the stew, and serve hot.
