Main Ingredients
- 2 large beets peeled and grated
- 1 medium carrot peeled and grated
- 1 tablespoon olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 pinch salt to taste
- 1 pinch black pepper to taste
1. Peel and grate the beets and carrot.
2. In a mixing bowl, combine the grated beets and carrot.
3. Add olive oil, lemon juice, salt, and black pepper. Mix well.
4. Serve immediately or refrigerate for later.
