Ingredients

  • 1 cup dried red beans soaked overnight
  • 1 cup rice
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium green bell pepper chopped
  • 2 stalks celery chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 4 cups water

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion, garlic, green bell pepper, and celery. Cook until softened.
  2. 2. Add the soaked red beans, water, thyme, paprika, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until beans are tender.
  3. 3. While the beans are cooking, prepare the rice according to package instructions.
  4. 4. Once the beans are tender, adjust seasoning if needed. Serve the beans over the cooked rice.
