  2. Peel and dice the kohlrabi into bite-sized pieces.
  3. In a bowl, toss the kohlrabi with olive oil, salt, and pepper until evenly coated.
  4. Spread the kohlrabi pieces on the prepared baking sheet in a single layer.
  5. Roast in the preheated oven for 25 minutes, or until the kohlrabi is tender and golden brown, stirring halfway through.
