Ingredients 

Main Ingredients

  • 2 lbs Tomatoes halved
  • 1 Onion chopped
  • 4 cloves Garlic peeled
  • 2 cups Vegetable Broth
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Sugar

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Place the halved tomatoes, chopped onion, and peeled garlic cloves on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast in the preheated oven for 30-35 minutes, until the tomatoes are soft and slightly charred.
  4. Transfer the roasted vegetables to a blender. Add the vegetable broth and blend until smooth.
  5. Pour the blended mixture into a large pot. Add sugar and adjust seasoning if needed. Simmer for 10 minutes.
  6. Serve hot with a drizzle of olive oil or a dollop of cream, if desired.
