Ingredients 

Salmon Burgers

  • 1 lb salmon fillet, skin removed finely chopped
  • ¼ cup breadcrumbs
  • 1 egg beaten
  • 2 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice freshly squeezed
  • ¼ cup green onions finely chopped
  • ¼ cup fresh basil chopped
  • to taste salt and pepper

Lemon Basil Mayo

  • ½ cup mayonnaise
  • 1 tablespoon lemon juice freshly squeezed
  • 1 tablespoon fresh basil chopped
  • to taste salt and pepper

Instructions 

  1. In a mixing bowl, combine the chopped salmon, breadcrumbs, beaten egg, mayonnaise, Dijon mustard, lemon juice, green onions, basil, salt, and pepper. Mix until well combined.
  2. Form the mixture into 4 patties.
  3. Preheat the grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until cooked through.
  4. While the patties are cooking, prepare the lemon basil mayo by combining the mayonnaise, lemon juice, basil, salt, and pepper in a small bowl. Mix well.
  5. Serve the salmon burgers on buns with a generous dollop of lemon basil mayo.
