  • 2 pounds red potatoes cut into bite-sized pieces
  • ½ cup mayonnaise
  • ¼ cup dill pickle relish
  • 2 tablespoons fresh dill chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 large hard-boiled eggs chopped

Instructions 

  1. 1. Boil potatoes in a large pot of salted water until tender, about 15 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine mayonnaise, dill pickle relish, fresh dill, salt, and black pepper.
  3. 3. Add the cooled potatoes and chopped hard-boiled eggs to the bowl. Gently mix until well combined.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
