- 2 pounds red potatoes cut into bite-sized pieces
- ½ cup mayonnaise
- ¼ cup dill pickle relish
- 2 tablespoons fresh dill chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 large hard-boiled eggs chopped
1. Boil potatoes in a large pot of salted water until tender, about 15 minutes. Drain and let cool.
2. In a large mixing bowl, combine mayonnaise, dill pickle relish, fresh dill, salt, and black pepper.
3. Add the cooled potatoes and chopped hard-boiled eggs to the bowl. Gently mix until well combined.
4. Chill in the refrigerator for at least 1 hour before serving.
