Ingredients 

Main Ingredients

  • 1 package phyllo dough thawed
  • 1 pound fresh spinach washed and chopped
  • 1 cup feta cheese crumbled
  • 1 cup cottage cheese
  • 2 large eggs beaten
  • 1 bunch green onions chopped
  • 1 cup fresh dill chopped
  • 1 cup fresh parsley chopped
  • ½ cup olive oil
  • to taste salt
  • to taste black pepper

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the spinach, feta cheese, cottage cheese, beaten eggs, green onions, dill, parsley, salt, and pepper. Mix well.
  3. Brush a baking dish with olive oil. Layer half of the phyllo dough sheets, brushing each sheet with olive oil as you layer.
  4. Spread the spinach mixture evenly over the phyllo dough layers.
  5. Layer the remaining phyllo dough sheets on top, brushing each sheet with olive oil.
  6. Bake in the preheated oven for 45 minutes, or until the top is golden brown and crispy.
  7. Let the spanakopita cool for a few minutes before cutting into squares and serving.
