Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 4 cups Fresh spinach
  • 4 cups Vegetable broth
  • 1 cup Milk
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Add spinach and cook until wilted.
  4. Add vegetable broth and bring to a boil. Simmer for 10 minutes.
  5. Blend the soup until smooth.
  6. Return to pot, add milk, and heat through. Season with salt and pepper to taste.
