- 1 tablespoon Olive oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Fresh spinach
- 4 cups Vegetable broth
- 1 cup Milk
- to taste Salt and pepper
Heat olive oil in a pot over medium heat.
Add chopped onion and garlic, sauté until translucent.
Add spinach and cook until wilted.
Add vegetable broth and bring to a boil. Simmer for 10 minutes.
Blend the soup until smooth.
Return to pot, add milk, and heat through. Season with salt and pepper to taste.
