  • 4 cups sliced summer squash
  • 1 cup chopped onion
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed crackers
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, boil sliced squash and chopped onion until tender. Drain well.
  3. In a mixing bowl, combine squash, onion, shredded cheddar cheese, sour cream, salt, and pepper.
  4. Transfer mixture to a baking dish and top with crushed crackers.
  5. Bake in preheated oven for 30-40 minutes, until bubbly and golden brown.
