Ingredients

  • 2 large sweet potatoes peeled and cubed
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 stalks celery chopped
  • 1 small red onion finely chopped
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Instructions 

  1. 1. Boil the sweet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.
  2. 2. In a large mixing bowl, combine mayonnaise, Dijon mustard, celery, red onion, salt, and black pepper.
  3. 3. Add the cooled sweet potatoes to the bowl and gently mix until all ingredients are well combined.
  4. 4. Chill in the refrigerator for at least 1 hour before serving.
