Ingredients 

Main Ingredients

  • 1 can Black-eyed peas drained and rinsed
  • 1 can Black beans drained and rinsed
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Cherry tomatoes halved
  • 1 cup Bell pepper diced
  • ½ cup Red onion diced
  • ¼ cup Cilantro chopped
  • ¼ cup Olive oil
  • ¼ cup Red wine vinegar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a large mixing bowl, combine black-eyed peas, black beans, corn, cherry tomatoes, bell pepper, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, garlic powder, salt, and black pepper.
  3. Pour the dressing over the bean mixture and toss to coat.
  4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
