Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 1 cup Sliced mushrooms
  • 1 tablespoon Red curry paste
  • 4 cups Chicken broth
  • 1 can Coconut milk
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 lb Chicken breast, thinly sliced
  • 2 Lime leaves
  • 1 Lemongrass stalk, cut into 2-inch pieces
  • 1 Galangal slice
  • 1 Lime, juiced
  • 1 Fresh cilantro, chopped

Instructions 

  1. Heat the oil in a pot over medium heat. Add the mushrooms and cook until softened.
  2. Stir in the red curry paste and cook for another minute.
  3. Add the chicken broth, coconut milk, fish sauce, and brown sugar. Bring to a boil.
  4. Add the chicken, lime leaves, lemongrass, and galangal. Reduce heat and simmer until the chicken is cooked through.
  5. Remove from heat and stir in the lime juice. Garnish with fresh cilantro before serving.
