Ingredients 

Main Ingredients

  • 200 g Pasta any shape
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • ¼ cup Red onion finely chopped
  • ¼ cup Olives sliced
  • ¼ cup Fresh parsley chopped

Dressing

  • ¼ cup Olive oil
  • 2 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic minced
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. 1. Cook the pasta according to the package instructions. Drain and rinse under cold water.
  2. 2. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and parsley.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper.
  4. 4. Pour the dressing over the pasta salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
