Ingredients

  • 1 lb Beef Stew Meat cut into bite-sized pieces
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 1 can Diced Tomatoes 14.5 oz can
  • 6 cups Beef Broth
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the beef stew meat and cook until browned on all sides.
  2. 2. Add the chopped onions and minced garlic to the pot. Cook until the onions are translucent.
  3. 3. Pour in the beef broth and diced tomatoes. Bring to a boil.
  4. 4. Add the carrots, potatoes, celery, thyme, basil, salt, and pepper. Reduce heat to low and let it simmer for about 1.5 hours, or until the vegetables are tender and the flavors are well combined.
  5. 5. Taste and adjust seasoning if needed. Serve hot.
