Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 cup frozen peas
  • to taste salt and pepper

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onion and garlic, and sauté until softened.
  3. 3. Add the carrots and celery, and cook for a few more minutes.
  4. 4. Stir in the zucchini, diced tomatoes, vegetable broth, thyme, and basil.
  5. 5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. 6. Add the frozen peas and cook for another 5 minutes.
  7. 7. Season with salt and pepper to taste, then serve hot.
