Vegetable Soup Recipe

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, chopped
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 cup frozen peas
- to taste salt and pepper
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic, and sauté until softened.
3. Add the carrots and celery, and cook for a few more minutes.
4. Stir in the zucchini, diced tomatoes, vegetable broth, thyme, and basil.
5. Bring to a boil, then reduce heat and simmer for 20 minutes.
6. Add the frozen peas and cook for another 5 minutes.
7. Season with salt and pepper to taste, then serve hot.
