- 1 can Chickpeas drained and rinsed
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- ½ teaspoon Garlic Powder
- ½ teaspoon Salt
- 8 pieces Taco Shells
- 1 cup Shredded Lettuce
- ½ cup Diced Tomatoes
- ¼ cup Chopped Cilantro
- ¼ cup Sour Cream
Heat the olive oil in a skillet over medium heat.
Add the chickpeas, cumin, paprika, garlic powder, and salt. Cook for 5-7 minutes, stirring occasionally.
Warm the taco shells according to package instructions.
Fill each taco shell with the chickpea mixture, then top with shredded lettuce, diced tomatoes, chopped cilantro, and a dollop of sour cream.
