  • 1 can Chickpeas drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Salt
  • 8 pieces Taco Shells
  • 1 cup Shredded Lettuce
  • ½ cup Diced Tomatoes
  • ¼ cup Chopped Cilantro
  • ¼ cup Sour Cream

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chickpeas, cumin, paprika, garlic powder, and salt. Cook for 5-7 minutes, stirring occasionally.
  3. Warm the taco shells according to package instructions.
  4. Fill each taco shell with the chickpea mixture, then top with shredded lettuce, diced tomatoes, chopped cilantro, and a dollop of sour cream.
