Vermicelli Noodle Bowl Recipe

Main Ingredients
- 200 g vermicelli noodles dried
- 1 cup shredded carrots
- 1 cup cucumber julienned
- 1 cup bean sprouts
- ¼ cup chopped peanuts
- ¼ cup fresh cilantro chopped
- ¼ cup fresh mint chopped
Dressing
- ¼ cup fish sauce
- 2 tablespoon lime juice freshly squeezed
- 2 tablespoon sugar
- 1 clove garlic minced
- 1 tablespoon water
Cook the vermicelli noodles according to the package instructions. Drain and rinse under cold water.
In a large mixing bowl, combine the cooked noodles, shredded carrots, cucumber, bean sprouts, chopped peanuts, cilantro, and mint.
In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and water until the sugar is dissolved.
Pour the dressing over the noodle mixture and toss to combine.
Serve immediately or chill in the refrigerator for up to 2 hours before serving.
