Ingredients 

Main Ingredients

  • 4 cups leeks, white and light green parts only, cleaned and sliced
  • 2 cups potatoes, peeled and diced
  • 4 cups chicken stock
  • 1 cup heavy cream
  • to taste salt
  • to taste white pepper

Instructions 

  1. 1. In a pot, cook the leeks in a bit of butter until soft.
  2. 2. Add the potatoes and chicken stock. Bring to a boil, then simmer until the potatoes are tender.
  3. 3. Puree the soup in a blender until smooth.
  4. 4. Stir in the cream and season with salt and white pepper to taste.
  5. 5. Chill the soup in the refrigerator before serving.
