Ingredients

  • 1 lb Chicken breast, cooked and shredded
  • 2 cans Great Northern beans, drained and rinsed
  • 1 can Corn, drained
  • 1 cup Chicken broth
  • 1 cup Sour cream
  • 1 cup Shredded Monterey Jack cheese
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ¼ teaspoon Cayenne pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the shredded chicken, Great Northern beans, corn, and chicken broth to the pot. Stir to combine.
  3. Season with ground cumin, dried oregano, chili powder, salt, black pepper, and cayenne pepper. Stir well.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  5. Stir in the sour cream and shredded Monterey Jack cheese until melted and well combined.
  6. Serve hot, garnished with additional cheese, sour cream, or fresh cilantro if desired.
