Seafood Cioppino Recipe

Main Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 large green bell pepper, chopped
- 28 ounce can diced tomatoes
- 8 ounce can tomato sauce
- 1 cup chicken broth
- 1 cup dry white wine
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 0.5 teaspoon dried thyme
- 0.5 teaspoon red pepper flakes
- 1 bay leaf
- 1 pound cod fillets, cut into chunks
- 1 pound large shrimp, peeled and deveined
- 1 pound mussels, cleaned and debearded
- 1 pound clams, cleaned
- to taste Salt and pepper
- 0.25 cup chopped fresh parsley
Heat olive oil in a large pot over medium heat. Add onion, garlic, and green bell pepper. Cook until softened.
Stir in diced tomatoes, tomato sauce, chicken broth, and white wine. Add basil, oregano, thyme, red pepper flakes, and bay leaf. Bring to a simmer.
Add cod, shrimp, mussels, and clams. Cover and cook until seafood is cooked through and mussels and clams have opened, about 10 minutes. Discard any unopened shells.
Season with salt and pepper. Stir in parsley before serving.
