Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Bell Pepper, chopped
  • 1 can Diced Tomatoes
  • 1 can Black Beans, drained and rinsed
  • 1 can Kidney Beans, drained and rinsed
  • 1 cup Corn
  • 2 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 cups Vegetable Broth

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic, cook until softened.
  3. 3. Add chopped bell pepper and cook for another 5 minutes.
  4. 4. Stir in diced tomatoes, black beans, kidney beans, and corn.
  5. 5. Add chili powder, cumin, paprika, salt, and black pepper.
  6. 6. Pour in vegetable broth and bring to a boil.
  7. 7. Reduce heat and let simmer for 30 minutes.
  8. 8. Serve hot and enjoy!
