Vegetarian Chili Recipe

Main Ingredients
- 1 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Bell Pepper, chopped
- 1 can Diced Tomatoes
- 1 can Black Beans, drained and rinsed
- 1 can Kidney Beans, drained and rinsed
- 1 cup Corn
- 2 tablespoon Chili Powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 2 cups Vegetable Broth
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, cook until softened.
3. Add chopped bell pepper and cook for another 5 minutes.
4. Stir in diced tomatoes, black beans, kidney beans, and corn.
5. Add chili powder, cumin, paprika, salt, and black pepper.
6. Pour in vegetable broth and bring to a boil.
7. Reduce heat and let simmer for 30 minutes.
8. Serve hot and enjoy!
